A New Favorite

As many of you know, I'm always looking for new recipes. I came across one a few weeks ago and mom made it and it received great reviews. My dad thought is looked like something you'd order in a restaraunt - he thought it looked way too fancy, especially for my mom to fix. Well, it's actually really easy and a low-cal meal so I thought I'd pass along a new favorite in our house. I'm sure it won't be popular with everyone since it is a fish dish, and it has tomatoes and mushrooms which I know are not favorites to many. But for those interested:

Baked Salmon with Spinach & Mushrooms
4 salmon filets 1 cup sliced mushrooms 1 med. tomato chopped
2 cups spinach 1/3 cup sun-dried tomatoe dressing (Kraft)
Spray 9x13 pan and arrange filets. Mix all other ingredients. Spoon on top of filets.
Bake at 375 for 20-25 mins (uncovered)
